Capture the taste of the tropics with these Key Lime Cupcakes. Feel free to omit the food coloring if you prefer to avoid artificial dyes and coloring.
1 cup all-purpose flour
¾ cup self-rising flour
½ cup (1 stick) unsalted butter, at room temperature
1¼ cups granulated sugar
2 large eggs
1 tablespoon lime zest
2½ tablespoons freshly squeezed lime juice
¼ teaspoon neon-green food coloring (optional)
¾ cup buttermilk
Frosting
1 (8-ounce) package cream cheese, at room temperature
½ cup (1 stick) unsalted butter, at room temperature
1 tablespoon lime zest
½ teaspoon vanilla extract
1½ cups powdered sugar
Preheat oven to 350 degrees F. Line standard muffin tin with 12 paper liners.
In a medium bowl, whisk together flours; set aside. In a separate large bowl, cream butter with an electric mixer on high speed until smooth. Add sugar, mixing to blend well. Beat in eggs, 1 at a time. Add lime zest, lime juice, and food coloring, if using. At this point, the batter may look curdled, which is completely normal. Alternately beat in flour mixture and buttermilk, starting and ending with flour. Aim for 3 additions of flour, and 2 additions of buttermilk. Spoon 1⁄3 cup batter into each prepared liner.
Bake cupcakes until toothpick inserted in center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.
For frosting:
In a large bowl, beat cream cheese and butter with an electric mixer on medium speed until smooth. Add lime zest and vanilla and mix well. Reduce mixer speed to low and gradually add in powdered sugar. Once sugar is incorporated, increase mixer speed and beat until frosting is light and fluffy, about 3 minutes. Frost cupcakes and serve.
